organic grass fed cattle
We raise cattle and crops the natural way, on grass pastures and our grass/alfalfa hay. When available we also sell hay, hard red wheat, rye, feed oats, and barley, goats and more. We farm using organic principles: no chemical sprays, hormones, antibiotics, or other synthetic amendments that go into the soil or the livestock. We try to understand and maintain a balance with nature and to be less dependent on fossil fuels. Since all feed is grown on-farm and all cattle raised here (excepting the bull) we can decrease the disease problems of fed-lot beef.
The herd includes traditional and old-world breeds., and is mostly Galloway, an Irish breed known for quality meat from natural grazing. Butchering takes place during the prime time season, June through October, when the cattle are on fresh grass. Summer beef is comparable to fall due to the lush pastures with greater plant variety. Grass-fed beef differs from grain-fattened because it has less fat (maybe less juicy,) more flavor and often requires gentler cooking to protect tenderness.
